Broccoli and cauliflower are not thirsty crops, and that is exactly why they get watered wrong. Both have shallow, fibrous root systems that rarely reach deeper than 18 inches, so they live on moisture in the top foot of soil. They also grow in the cool season, when evaporation is low and a grower can be lulled into thinking the crop will take care of itself. It will not. Broccoli and cauliflower are magnets for downy mildew, black rot, and Alternaria leaf spot, and every hour of wet leaves is an open invitation. Sprinklers also throw water onto the soil between rows, where there are no roots to use it.
Drip puts water at the base of the plant, keeps the leaves dry, and pushes moisture into the root zone instead of onto it. On a 40-inch bed with two plant rows, a single line of drip tape down the middle waters both rows from the wetted bulb that spreads sideways through the soil. Most growers I have talked to report 30 to 40 percent less water used versus overhead, and the drop in disease pressure is the part you cannot put a number on until you have grown a season both ways.
Spacing: emitters, beds, and how dense to plant
Broccoli and cauliflower share a bed, but they do not share a plant count. Broccoli is usually set 12 to 18 inches apart in rows 30 to 36 inches apart, which works out to roughly 15,000 to 20,000 plants per acre. Cauliflower needs more room: 18 to 24 inches in the row, for 10,000 to 15,000 plants per acre. That wider spacing is not a style choice. Cauliflower heads shove each other around when crowded, and a squeezed plant makes a lopsided curd.
The drip line follows the plant rows, not the bed edges. On a 40-inch bed with two rows 14 inches apart, one run of 8-mil drip tape with emitters every 12 inches sits down the middle and waters both rows. On wider beds or single-row plantings, run one line per row. The 12-inch emitter spacing matters because the roots are shallow and dense; a 24-inch spacing leaves dry pockets right where the fine roots feed.
Pressure-compensating drip emitters are worth the small upcharge if the field has any slope. Broccoli is often planted on light, sandy loam that drains fast, and on sand the wetted bulb is narrow and deep rather than wide and shallow. That means closer emitter spacing, 8 inches rather than 12, and shorter, more frequent pulses instead of one long soak.
Scheduling: how much water and how often
Broccoli and cauliflower need roughly 1 to 1.5 inches of water per week, more during head formation. The catch is that both crops sit in the ground 60 to 100 days depending on variety, and the demand curve is not flat. The first three weeks after transplanting are shallow-rooted and need frequent, light watering so the root zone never dries out. Once plants are established you can back off. Then, when the head starts to form, demand spikes, and that is when you cannot afford a stress day.
I have seen more broccoli lost in the two weeks around head initiation than in the whole rest of the cycle. A single dry spell in that window triggers buttoning in broccoli and brown bead in cauliflower, and no amount of water afterward undoes it. If you only have the discipline to watch soil moisture at one growth stage, make it head formation.
A cheap way to schedule is a soil moisture sensor or tensiometer set in the root zone, read before each irrigation. Keep the top 12 inches between 60 and 70 percent of field capacity. Sandy ground wants more frequent, shorter cycles; heavier loam can take a longer, slower soak. The beauty of drip is that you can run those short pulses without flooding the field, which overhead cannot do as cleanly.
Fertigation: the boron angle most people miss
Broccoli and cauliflower are heavy feeders, and drip makes feeding them almost too easy. Nitrogen goes out in split applications, with the biggest share in the three weeks before head formation. But the two nutrients that catch brassica growers off guard are boron and molybdenum. Hollow stem in broccoli and brown, bitter curds in cauliflower are classic boron deficiency signs, and both are worse on sandy, leached soils. Molybdenum deficiency shows up as whiptail in cauliflower, a narrow, strap-like leaf that is easy to misread as insect damage.
Injecting boron and molybdenum through the system is straightforward once you have a filter and injector in line. A venturi injector that costs under a hundred dollars handles both, and the dosing is tiny, a few ounces per acre dissolved in the injection tank. Do not guess on boron. The gap between deficient and toxic is narrow, so a soil test before the season is money well spent.

The water savings are real, but they are not the whole story. The disease reduction and the yield consistency are. A dry leaf means fewer sprays, and fewer sprays mean less tractor time, less chemical cost, and a crop that clears the field sooner. Cauliflower buyers grade hard on curd color and tightness, and the difference between a clean white curd and a brown-tipped one is the difference between a premium crate and a processing bin.
If you grow both crops on the same ground, one drip system with a shared header and a few extra zones covers both, since the spacing and scheduling are close enough to share. Start with a soil test, size the filter for your water, and run the tape under a light layer of mulch if the spring is cool and wet.
